Catharsis is an exclusive dinner that pairs six wines from a single winery with six dishes from our local cuisine. Diners also get to hear winemakers talk about their experience and way of working. On this occasion we shall be joined by Sylvain Respaut, who will share some of the secrets of his wines, which are bursting with pure fruit and have plenty of personality. Vibrant and full of energy, these wines are created from what we could call a love of life.
What is Catharsis?
Catharsis is an Hostal Spa Empúries initiative designed to bring together local cuisine and original wines made in keeping with our own philosophy. Every two months, we invite small, dedicated wineries that are as committed to nature as they are to the final product to share their wines with us around the dinner table.
Catharsis has a simple aim: to offers diners an engaging experience where they can discover interesting new wines and savour our versatile local cuisine. for the fourth edition of Catharsis, in May 2017, wine distributor and merchant La Vinícola, headed by Víctor Jiménez, will be bringing vigneron Sylvain Respaut to the Hostal Spa Empúries.
The Hostal Spa Empúries project goes above and beyond the hotel itself. set in stunning natural surroundings alongside the cradle of Western culture on the Iberian Peninsula, the Hostal Spa Empúries has a deep love and respect for its environment in three key areas: architecture, since both the new buildings and the renovated original ones follow stringent sustainability criteria, making it the first hotel in Europe to win LEED Gold certification; wellness, thanks to our holistic spa treatments, which meet guests’ physical and spiritual needs, and to our organically certified products, which we ensure are environmentally friendly at all levels; and, finally, gastronomy, with fresh produce grown on our own organic vegetable garden spanning several hectares or supplied by local farmers, and fresh fish, caught mainly in the waters off L’Escala and Llançà.

Sylvain Respaut’s twin passions and professions are beekeeping and natural winemaking. every day he works his four hectares of vines and hives in Caramany, in the heart of Fenolleda county, following biodynamic principles.
His big-personality wines are bursting with pure fruit and never fail to leave their mark wherever they go. Vibrant and full of energy, these wines are created from what we could call a love of life.
Made without any additives at all, wines such as Java and Zumo, and of course the famous Carbo Culte, have to be tasted to be believed.
